The origin of chai is credited to countries in the Himalayan region; India, Nepal, Pakistan and Tibet. In that region, the word "chai" means "tea". Our chai spices are blended with their traditions in mind. We carefully handcraft our Masala influenced chai by mixing crystalized ginger nibs, Saigon cinnamon chips, green cardamom pods, star anise, cloves, black peppercorns and bay leaves. When combined with a black tea, sweetener, and milk, the results are simply heavenly. One ounce of chai spice can make up to eight cups of chai.

Ingredients:
 Crystalized ginger nibs, Saigon cinnamon chips, green cardamom pods, star anise, cloves, black peppercorns and bay leaves

 

Directions for making 8 cups of Chai: Bring 6 cups of water and 4 tablespoons of Chai Spice to a boil, reduce heat and simmer for 5 minutes. Remove from heat, cover and steep for 10 minutes. Add 2 cups of milk and return mixture to heat until it simmers. Stir in 2 tablespoons of Darjeeling black tea (about 6 tea bags) and 4 tablespoons brown sugar or honey, remove from heat, cover and steep for 5 min. Strain and serve.
